Chocolate Pumpkin Muffins
Who doesn’t love pumpkin muffins. Here’s a super easy, super yummy recipe that your whole family will love!
Ingredients
- 1 (15 oz) can Pumpkin puree
- 2 eggs, large
- 1 ¾ cups all purpose flour
- ½ tsp baking powder
- 1 tsp baking soda
- ½ cup brown sugar
- 2 tsp cinnamon, ground
- ¼ tsp cloves, ground
- 1 cup granulated sugar
- ¼ tsp nutmeg, ground
- ½ tsp salt
- 1 tsp vanilla extract
- ½ cup coconut oil
- 1tbsp whole milk
- 1 cup chocolate chips
Instructions
- Preheat oven to 375 degrees F. Line a muffin pan with paper liners or grease with nonstick spray.
- In a medium bowl, combine the flour, sugar, brown sugar, baking soda, baking powder, salt and spices.
- In a small bowl, combine the eggs, pumpkin puree, coconut oil, milk, and vanilla extract. Whisk to combine. Pour the wet mixture into the dry ingredients and fold to combine. Lastly, add the chocolate chips.
- Using a scoop, scoop the batter into prepared muffin pan.
- Bake for 22-24 minutes.
Crock Pot Pumpkin Spice Latte

Ingredients
- 6 cups coffee
- 5 cups whole milk
- 1 cup heavy cream
- ½ cup pumpkin puree
- ½ cup sugar
- 3 tsp cinnamon
- 4 tsp vanilla extract
Instructions
- Add coffee, milk and heavy cream to the crock pot
- In a small mixing bowl, combine the pumpkin puree, vanilla, sugar and cinnamon
- Whisk the ingredients into the milk and coffee into your crock pot
- Cook on high for two hours in the crock pot and serve.
Pumpkin Soup in 20 Minutes
If you are not pumpkin’d out by now, here is a delicious recipe you can have ready in 20 minutes making dinner nutritious and easy!
Ingredients
- 2 tbsp olive oil
- 1 medium yellow onion, very finely chopped
- 3 cloves garlic, grated
- 1 (15 oz) can pumpkin puree
- 2 tbsp fresh thyme leaves
- ¾ tsp salt
- ½ tsp cumin, ground
- ¼ tsp black pepper
- ⅛ teaspoon ginger, ground
- ⅛ tsp cayenne pepper
- 2 cups vegetable broth
- 2 tbsp maple syrup
- 2 tbsp heavy cream
Instructions
- Heat the olive oil in a medium saucepan over medium heat until shimmering. Add the onion and garlic. Cook until fragrant.
- Add the pumpkin puree, thyme, salt, cumin, black pepper, ginger, and cayenne pepper and cook over medium-low until steaming and fragrant.
- Add the vegetable broth and cook for 3-4 minutes, stirring constantly.
- Remove from heat and stir in the maple syrup and heavy cream.
- Serve.
